Cannoli Naked Drip Cake

A very special lady in my life was having a milestone birthday. She loves cannoli so I was on a mission to create the best cannoli cake ever. I researched and tested many cannoli cream recipes. After a few tries I found the right consistency and flavor profile. The yellow cake was my own basic recipe with a few adjustments that would complement the cream. 
 
To decorate the cake I decided to go with a naked drip cake look. I wanted people to know that this was a cannoli cake so I did not want to cover it with frosting. I added the chocolate ganache as another element of flavor and decoration. To finish the cake I added crumble cannoli shell around the top rim of the cake.
 
The different elements of the cake complemented each other to create the best cannoli cake ever. Can I tell you a secret?  I’m not a big cannoli fan but this cake was so delicious I could not stop eating it.

Ingredients

Yellow Cake

  • 3 cups flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 2 tsp vanilla extract
  • 1 tsp almond extract
  • 2 cups sugar
  • 1 1/4 cups butter softened
  • 1/4 cup vegetable oil
  • 4 large eggs

Cannoli Cream

  • 3 cups ricotta cheese
  • 2 cups mascarpone cheese
  • 3 cups powdered sugar
  • 1 teaspoon vanilla
  • 1/4 teaspoon cinnamon
  • 1/4 cup mini chocolate chips

Chocolate Ganache

  • 1 cup semi sweet chocolate chips
  • 2 tbsp hot milk

Instructions

Yellow Cake

  1. Preheat oven to 350°F. Grease three 8 inch rounds and dust with flour.

  2. In a bowl combine flour, baking powder, and salt. In a messuring cup add milk  vanilla and almond extract.

  3. In a mixer cream sugar and butter. Add eggs one at a time.

  4. Once creamed sugar is smooth begin to add flour mixture and milk mixture. Alternate flour and milk mixture a little at a time until all combined. 

  5. Divide batter between the three cake pans. Bake for 30-40 minutes.

Cannoli Cream

  1. In an electric mixer cream ricotta and marscapone. Add vanilla and cinnamon. Add powdered sugar a little at a time.

  2. Reserve 1/4 of the cannoli cream to cover cake (do not add mini chocolate chips). To the remaining 3/4 of the cannoli cream add chocolate chips. I used 1/4 cup of mini chocolate chips but you can add as much or as little as you like.

Cake Assemble

  1. Once cakes has been baked let it cool completely. Add chocolate chip cannoli cream between each cake layer and stack together. With reserved cannoli cream lightly cover top and sides.  Refrigerator to set. 

  2. Make chocolate ganache mix 1 cup of semi sweet chocolate in 2 tbsp of hot milk until silky smooth.

  3. Remove cake from the refrigerator and apply chocolate ganache to create a dripping affect.

  1. Hi there, this cake looks beautiful & sounds delicious! I can’t wait to try it out for my Husbands Birthday next week. On here you wrote 3 cups of powdered sugar but the YouTube video you posted says 4 cups. Can you just clarify which it is? Thank you!
