Christmas Cranberry Orange Bundt Cake

Cranberries and the holidays go hand in hand. I love the combination of cranberry and orange so this holiday season I was on the hunt to create a delicious cake. I researched and tested recipes until I came up with my Christmas cranberry orange bundt cake. My Husband and two little boys love it. Now I’m making them as gift for friends, family, neighbors and teachers.

Christmas Cranberry Orange Bundt Cake

Ingredients

  • 2 sticks of butter
  • 1 1/4 cup sugar
  • 3 eggs
  • zest of one lager orange
  • 3 tbsp of freshly squeezed orange juice
  • 1/2 cup milk
  • 2 cups of all purpose flour
  • 2 tsp baking power
  • 1/2 tsp salt
  • 2 cups of fresh cranberries
  • powered sugar for dusting

Instructions

  1. Set oven to 350 degrees.
  2. In a mixer cream butter and sugar until smooth. Add eggs one at a time.
  3. Add orange zest, orange juice and milk to mixture.
  4. In a bowl mix flour, baking power, and salt. Add to mixture a little at a time.
  5. Fold in cranberries.
  6. Coat baking pan or bundt cake pan with butter and dust with flour. Transfer mixture to baking pan.
  7. Baking depends on the size of the pan. 25 minutes for small individual cakes up to 40 minutes for lager baking pans.
  8. Once cake has cooled and ready to be serve dust powered sugar over the top for a snowy look.

Cranberry orange bundt cakes make a perfect holiday gift for neighbors and teachers. My son Blake helped me make some for his teachers. I took his picture while we baked and made it into a gift tag.
